Flamingo

Ingredients
Three layers of Red Velvet cake with vibrant beets. Frosted with Valrhona Inspiration Strawberry cream cheese and filled with raspberry pureé and coconut flakes.
Garnished with freeze dry raspberries, strawberries and coconut chips and beet sprouts.

Flamingo
By completely avoiding the use of food coloring we achieved this subtle version that gets the beautiful natural color from beets. The raspberries and the cream cheese add a bit of sourness to a an overly delicate dessert, that reminded us of the most beautiful creatures, the Flamingos.


Room for dessert
The inspiration behind this cake is, well, red velvet cake. But because of the food coloring, it felt like eating crayons. We wanted a red velvet that we could love. We wanted a red cake for Rubi to have all those amazing red ingredients and looking back, we found the perfect tribute to: the dessert named “RED” at Room4 Dessert by chef Will Goldfarb, in Bali.
