From east to west

In our perspective, we wanted to combine two beloved culinary areas for us, San Sebastian with Matcha from Kyoto Water.

Our superior matcha, Niko Neko Matcha, adds a slightly subtle Umami flavor to this very fresh and creamy cheesecake.

The specialty of SAN is the intense caramelization at the top hence the name “Burnt”, the light caramel background flavor also combines with the matcha to give an elegant taste with very little sweetness.

This cheesecake is served without topping, but you can accompany it with different fruits or even with ice cream.

San Sebastián

In recent years, Burnt Basque Cheesecake has quickly made its way onto restaurant menus around the world as a lighter, creamier alternative to the classic New York Cheesecake.
 
Although there are many theories and recipes floating around about this cheesecake, we believe that the Basque cheese used for it is the real reason why it is so inimitable.
 
Before bringing it our way, we visited the iconic place that has around 30 years of tradition in its preparation, La Viña in San Sebastian (Basque Region, Spain) and learned a lot about it.
